In order to study vitamin E ester derivative’s chemical stability and it’s correct use in food products, the chemical stabilities of vitamin E acetate affected by water content, temperature, pH, and so on, were studied,and the antioxygenations of vitamin E acetate in oils were also compared by that of free vitamin E in this paper. The results showed that vitamin E acetate was stable and not hydrolyzed in water solution at lower temperature; vitamin E acetate became unstable and began to be partly hydrolyzed in acid or base solution at higher temperature; vitamin E acetate was easily hydrolyzed in the solution which contained lipase. Although vitamin E acetate and free vitamin E may have a similar bioactive function, our results also showed that there was a difference in chemical stability and antioxygenation between vitamin E acetate and free vitamin E. It is necessary to choose an appropriate form of vitamin E to improve vitamin E’s efficiency during the food or Healthy Food production.

The bacteriophages damage to 2-keto-D-gluconic acid fermentation in the industrial process was investigated. After infection by the bacteriophages, the morphology of the bacteria, the changes of the seed culture and the fermentation course were also observed. The results showed that the bacteriophages infection resulted in the reduction of conversion ratio, the prolonga- tion of fermentation period and the decrease of fermentation broth filtration rate. The damage caused by the bacteriophages infection had significant differences among earlier-, middle- and later-fermentation stages(p<0.01) respectively. The earlier the infection started, the more serious the damage was.

A total 134 food items were selected from Japanese Food Composition Table (FCT), and recalculated the energy values by 5 different food energy conversion systems respectively. The comparison on means, data profile plots, and analyses on absolute and relative difference (bias) all indicate that (1) different energy systems may produce significant differences on energy value, especially to high dietary fiber (DF) foods; (2) the ME specific and ME mod have showed the best correlation and consistency among systems, and produced the moderate energy values; Atwater’ factors inclined to assign the highest energy values, while the NME and European general factors have obtained the lowest energy level; (3) the Chinese FCT applied, so called European General Factors System may have underestimated the energy value on total FCT level, and have greatly underestimate the energy value when meets the very high fiber foods and diets. (4) Totally, Energy of China applied system is less (population mean and 95% CI) 36.2 (17.9~54.5) %, 17.8 (9.5~26.2) %, 17.6(8.9~26.1) % and 7.5(1.2~13.9) % than Atwater’s, ME specific, ME mod and NME respectively.

An epidemiology investigation, as a result, showed that wine may has the function of preventing the cardiovascular disease potentially, it was French paradox. Grape has rich polyphenol, cyanin and etc. These materials also consist in fruits and vegetables largely, furthermore, flavones, carrotenoids, vitamin C in fruits and vegetables, and whether they have similar thus functions, so we experimented with the extracts from tomato, eggplant, kudzu and tea on the Cu2+-mediated oxidative modification of low-density lipoprotein (LDL). The result was that lycopene could restraint of LDL oxidized violently, flavonoids and vitamin C were as also the effect. Oxidized-LDL was also subjected to electrophoresis, it was affirmed the extracts from these fruits and vegetables inhibited LDL to be oxidated and reduced Ox-LDL. It implies fruits and vegetables are be capable of prevention the cardiovasculard isease.

In this paper, the polysaccharides of Pleurotus ostreatus were extracted by enzymy and hot-water, and precipitated with perpendicular experiments. The protein in polysaccharides was removed by sevage way. The polysaccarides were graded to A、B、C、D by ethnol. The results showed that the extracting rate of water soluble polysaccharides by enzyme was 15. 7%, and the polysaccharides had antioxidation effect on the• OH and O•2.

Under the condition of the weak acidity and normal temperature, the red pigment of the red-skin-radish is extracted and its properties are studied to determine the influence of the light, heat, oxidizer, reducing agent, pH value and such common metal ions as Fe3+, Fe2+, Cu2+, Al3+, Ca2+ etc. on the property of the pigment. Such pigment remains a good stability for the light and the heat, and is suitable for the food dyeing agent which is sterilized in high temperature. And this kind of pigment has great practicalp rospects.

The hydrolysis of sodium tripolyphophate(STPP), tetrasodium pyrophophate(TSPP), disodium pyrophophate (DSPP) and sodium hexametaphosphate(HMP) was studied in chicken thigh meat(CT) by 31P NMR. The results showed that TSPP, DSPP, STPP and HMP were all hydrolyzed in the chicken thigh meat. TSPP was hydrolyzed to orthophosphate in 10h. DSPP were hydrolyzed more slowly than TSPP, its relative content was accounted for 40% of NMR total visible phosphorus. STPP was hydrolyzed to orthophosphates and pyrophosphate at 10h, meanwhile the pyrophosphates derived from STPP was continuously hydrolyzed to orthophosphate. No pyrophosphates was found in the breast meat treated by HMP marinade. Terminal phosphorus was zero at 10h, the relative content of interior phosphorus was unchanged basically for 10h.

In this paper, the degree of molecular linearization of the maltdrier was measured: the degree of molecular linearization is bigger than that of the original flour ; the range of the differences of molecular size is bigger than that of the original flour; the potato maltdrier produced by heat stable α- amylase showed even granule with obvious cavity in relatively sponge like brokenstone structure. The granularity reduced notably, and it achieved the mimic sense of fat. The hydrolysate had the kindred crystal apex as the original flour. The results indicated that the maltdrier after hydrolysis and torrefaction still retained the crystal frame. The crystal degree of the hydrolysate was 14.6356%. The upper and lower limits were 10% and 40% respectively when the maltdrier was used in practice.

It is very common that the sluggish or even stuck fermentation occurs during the cider making, especially basing on the concentrated apple juice. The main reason is the lack nutrition of yeast, including the Yeast Assimilable Nitrogenous Compounds(YANC) and the vitamins. So we designed the single factor experiments, to find out the optimum adding quantity of the eight nutrition factors, including ammonium monoacid phosphate (DAP), ammonium sulfate, thiamine, inositol, biotin, nicotinamide, pyridoxine and pantothenic. It is indicated that the content of the alcohol reached the highest point when the adding quantity of mmonium monoacid phosphate (DAP), ammonium sulfate, thiamine and biotin is 400, 1200, 0.30 and 0.20mg/L respectively.

The extraction and anti-oxidation of the flavonoid from Dicrano pteris pedata was studied. The result showed that, the best extracting condition is: ultrasonic wave 20min, alcohol concentration 50%, temperature 85℃ and extracting 1.5h. The flavonoid had good anti-oxidation to the hydroxyl free radical and the oxygen free radicals.

The flesh steamed breads were frozen at -18℃ for twenty four hours. Then were reheated through microwave . Water mobility of frozen steamed bread were studied by Magnetic Resonance Imaging. Because water content was one of key factors that influenced the quanlity of steamed bread,we compare the two ways to rehead steamed breads:one was no water at the bottom of microwave bowl, other was some boiled water in the bottom of microwave bowl.The result showed the second means could improve the water content of steamed breads.

Object: To study the submerged culture of Clitocybe maxima mycelia and its effect on skeletal muscle fatigue. Method: Selecting the optimum carbon sources, nitrogen sources and inorganic salt to get the optimum liquid medium recipe by the orthogonal test in three factors and four levers; Isolated toad gastrocnemius stimulated by pulse electricity was regarded as fatigue model and Clitocybe maxima mycelia was compared with Ringer solution to see what influence they had on muscle contract ability. Results: The optimum liquid medium recipe was brown sugar 2%, wheat-bran 3%, KH2PO4 0.2%. Clitocybe maxima mycelia of 0.8mg/ml and 0.3mg/ml could delay the time when muscle contract extent was 90%, 50% and 10% of its maximum, while that of 0.1mg/ml could delay the time when contract extent was 90% of its maximum(p<0.05). Conclusion: Clitocybe maxima mycelia had the function of delaying fatigue of isolated skeletal muscle.

The Se was accumulated in the fruiting-body by adding the Se to the culture medium of Pleurotus ostreatus. The results shows that: when the Se in the culture medium was in 10~20mg/kg, the Se in the fruiting-body could get 70~120μg in 100g fresh weight. The fruiting-body yield could increased 30%. The 4.08% and 3.49% of the added Se could be accumulated in the fruiting-body. The amylose could get 146.3mg/g dry weight, vitamin C could get 20~21mg/100g dry weight. For the concentration of the Se in the fruiting-body was in low level, So the fruiting-body of P. ostreatus was safety to eat.

Lactoferrin (LF) is an iron-binding glycoprotein in milk. Bovine lactoferricin (LfcinB) is a peptide having 25 amino acid residue derived from the N-terminal part of BLf . BLf and LfcinB possess a variety biological functions , and it’s broad- spectrum antibacterial activity is knockout . In this experiment, the antibacterial activity of holo-Lf, apo-Lf and LfcinB was studied and compared, and Escherichia coli was used for studying the antimicrobial growth . The results shown that the minimum inhibitory concentration (MIC) of bovine holo-lactoferrin (holo-LFB), bovine apo-lactoferrin (apo-LFB) and lactoferricin (LfcinB) against E.coli is 6mg/ml, 3mg/ml and 15μg/ml and the minimum bactericidal concentration (MBC) of Lfcin against E. coli is 30μg/ml, respectively. The ability of inhibiting E.coli growth enhanced 200 times for apo-LFB and 400 times for holo- LFB after LFB was hydrolysised and puritied.

Natural antioxidant enriched rice bran oil extracts were obtained by extracting rice bran oil with ethanol, isopropanol and ethyl acetate. The yields of extraction were 26.8%, 67.1% and 82.8% respectively. The extracts were added into conjugated linoleic acid(CLA) for oxidation test at 60℃. Results show that although different extracts have different antioxidative activity for CLA, they all have higher activity than BHT has. And among them the isopropanol extract has the highest activity. It is clear that the isopropanol extract can be used as a good natural antioxidant to protect CLA from oxidation.

The purpose of this study was to isolate and purify proteins from fresh apple and apple juice concentrate, identify these proteins by peptide mass fingerprinting, determine the total polyphenol and polysaccharide content, and amino acid analysis. The results shows that Thaumatin-like protein 1 is one of the major protein constituents of fresh apple fruit, it is a glycoprotein and rich in hydrophobic amino acid, it is readily cause post-haze in apple juice. Proteins in apple juice concentrate were more complex, it is combined with polyphenol and polysaccharide and made molecular accelerate, and cause post-haze finally.

Utilizing the Microfluidizer machinery as the carrier of Instantaneous High Pressure treatment to deal with dietary fiber from bean dregs, and through the physic-mechanic treatment of the dietary fiber, the effect of Instantaneous High Pressure treatment on the solubility of dietary fiber before and after the process has been studied. Under the operation pressure of 40MPa 100MPa and 120MPa, the soluble dietary fiber content of the material was 7.08% 17.51% and 24.76% respectively while the total dietary fiber content was 63.87% 72.19% and 69.78% with the SDF/TDF settled at 0.1109 0.2424 and 0.3548 correspondingly. Concluded from hereinbefore, the content of the total dietary fiber and soluble dietary fiber will be both increased after the process of Instantaneous High Pressure treatment.

The effects on separation and purification grape seed extracts by polyamide column chromatography, as well as the capacity of eliminating• OH of each segment were studied. The results showed that the suitable velocity of flow and the concentration of sample loading are 0.45 ml/min and 5~8 mg/ml respectively. The highest yield can be obtained when washing with 80% acetone. Among four washing segments, the products coming from 40% acetone and 80%acetone during washing has showed much high capacity in eliminating• OH, then came the 60% acetone. However, the capacity of eliminating• OH of each segment is better than that of catechin.

The contents of bothγ-aminobutyric acid(GABA) and glutamic acid(Glu) were determined by High Pressure Liquid Chromatography(HPLC). Through studies of tea samples made by different processing technologies, the variable rules of contents of GABA and Glu were analysed throughout the whole process. The results showed that: the contents of GABA and Glu in pan-fired green tea and Gabaron tea were 0.12mg/g, 2.72mg/g and 1.70mg/g, 1.18mg/g respectively. The treatment of vacuum and filling nitrogen was beneficial to the biological synthesis of GABA. During 3h of vacuum and filling nitrogen treatment, the synthesizing speed was up to 0.33mg/h. The treatment of continuous long time vacuum and filling nitrogen wasn’t considered to be feasible because it lowered the GABA synthesizing speed to 0.08mg/h during its late 3h due to the shortcoming of Glu. The treatment of removing nitrogen and filling oxygen was able to raise the content of Glu from 1.18mg/g to 2.50mg/g. According to this experiment, the best Gabaron tea process was: fresh leaves→vacuum and filling nitrogen(3h)→removing nitrogen and filling oxygen(2h)→vacuum and filling nitrogen(3h)→fan-fired green tea process.

The effect of chilled pork treated with or without preservation solution, irradiation dose(1,2 and 3kGy)on the physicochemical and sensory characteristics of vacuum-packaged chilled pork stored at (4±1℃)for 21days were studied, in order to determine the best method of irradiation to extend shelf life of chilled pork. The result show: The chilled pork color is stable in the storage-life when the X-ray was 2kGy. The best method that can extremely extend shelf life of chilled pork is that the sample are treated with preservation solution, vacuum-package, 2.0kGy irradiation and refrigeration.

To utilize the (IMP) system of temperature measure ment and the technique of tissue slice cut of the Meretrix Linnaeus and the Paphia Undulata, in three different freezing methods as -196℃(liquid), -78℃(dry ice) or -18℃(refrigerator), we have studied their tissue structural changes during the course of freezing. As a result of experiments study, the freezing in liquid nitrogen showed a little effect on the structure of the Bivalves. It was the best method best for Meretrix Linnaeus but not to the the Paphia Undulata. The method of dry ice freezing on the tissue structure of the bivalves showed some effect on the even distribution of ice crystals. The freezing method of refrigerator showed severe deformation of the tissue structural changes. Therefore, the best freezing condition for the Meretrix Linnaeus were the faster freezing velocity and the lower temperature while the best freezing conditions for the Paphia Undulata were the intermediate freezing between the dry ice and the liquid nitrogen IMP-Isolated Measurement Pod.

Through orthogonal experiments, the reaction was carried out in non-aqueous medium with methylene chloride as solvent and pyridine as catalyst. The influence of the initial molar ratio of substrates, the amount of catalyst, reaction temperature and time was investigated, and the vitamin E oleate product was analysed by TLC and HLCP. The optimum of reaction conditions were established as follow: at 45℃, vitamin E (α-tocopherol )/ oleic chloride (mol/mol) =3:1, in the presence of 0.025ml the pyridine as catalyst, vitamin E oleate yield reached 41.8% after 4h of reaction.

The processing technology conditions of controlled oxidation of suet for preparation of muttony flavor by the thermal reaction were studied in this paper by some single factor tests and aroma evaluating experiments. The optimum conditions of controlled oxidation reaction are as follows: the temperature of reaction is about 130~135℃, the flux of compressed air is 0.20~ 0.25m3/(h•kg suet) and the reaction time is 3.0~3.5 h. And a muttony flavor with nice aroma and characteristics could be obtained when the states of oxidized suet participated in the thermal reaction (uniform prescription) are as follows: the peroxide value (P. V.) is between about 350~500 milliequivalents of active oxygen per kg suet, the p-anisidine value (p-A.V.) is more than 200, and the acid value (A.V.) is less than 3.0 mg KOH per kg suet.

Results showed that: the highest production rate of protoplast could be obtained by using 0.6mol/L mannitol, 2.5% lywallzyme and digesting for 3 h at the condition of 30℃, and 50r/min, pH value 4.5~5. The optimum extracting process of total flavones from bamboo leaves was obtained after using L9(34) orthogonal test plan. We selected four elements——solvent type; solvent concentration; material-solution ratio and extracting time to observe their effects on the extraction of bamboo flavones. The orthogonal test results showed that the optimum conditions were: 60%, acetone, 3h, material-solution ratio 1: 40. The major factors affecting the content of total flavones were the solvent concentration and the material-solution ratio. Both of them had a significant effect on the yield (F>F0.01). On the basis of these experiments, we used x-5 macroreticuler resin together with polyamide to purify the extraction, and the final content of total flavones was up to 78.97%.

A primary investigation into the separation of carotene, xanthophylls and chlorophylls on reversed-phase C18 supercritical carbon dioxide chromatography was made in this study. Carotene, xanthophylls and chlorophylls were readily separated under the conditions as follow: Stationary phase: Zorbax ODS; Mobile phase: 3% (V/V) propanol-1 in CO2; Supercitical conditions: pressure: 4000psi; temperature: 40℃; flow rate: 2.0ml/min; detection: 435nm. In comparison with the chromatographic profit of those fractions on reversed-phase C18 HPLC, their SFC profit showed a normal phase pattern. This observation suggested that supercritical carbon dioxide was strong apolar and pre-packed reversed phase C18 column could be employed as normal phase stationary phase for the separation of those compounds.

In this research, corn yellow powder is by-product of starch factory,using corn yellow powder as material to extract zein after supercritical CO2 fluid extraction, then manufacture oligopeptides using this zein through enzymolysis. The optimum technique condition of supercritical CO2 fluid extraction was determined through orthogonal test. When supercritical CO2 fluid extraction, the pressure is 25 MPa, temperature is 45℃, time is 100 min, CO2 flow is 30 L/h. percentage extraction is 8.06%, after extracting the content of protein is 90.46%, fat is 0.1%. Compare with non- supercritical CO2 fluid extraction and treatment by organic solvent, zein percentage extraction of corn yellow powder is more than 50.33% and 35.69%. Manufacturing oligopeptides using higher purity zein through enzymolysis, hydrolytic degree of zein more than 47.16% and 36.75% compare withl non- supercritical CO2 fluid extraction and treatment by organic solvent .

Aim at obtaining iron-containing protein from earthworm as nutrient, aqueous two-phase extraction and other methods were performed in purification process based on the characters and their exist state of hemoglobin in earthworm body. Results showed that using directly isoelectric point precipitation at pH 5.1 after the aqueous two-phase extraction composed of 12%(W/W)polyethylene glycol and 12%(W/W)ammonium sulfate may separate well the iron-containing protein from other substances. Addition of the ion exchange chromatography Q Sepharose fast flow column in final process may get pure Lumbyicus terrestris hemoglobin. The preparation of iron-containing protein product in high quality from earthworm was simple, per- formed easily with lower cost based on this study, which was very useful for manufacture blood tonic food utilizing earthworm asm aterials.

China has rich and inexpensive fat and oils from animal and plants, but these resources could not be effectively utilizated. In order to make use best of these resources, the lipase-catalyzed acidolysis of lard with caprylic acid to produce functional lipid was investigated. Of the five lipases that were tested in the initial screening, immobilized lipase TL IM from T. languginosa resulted in the highest incorporation of caprylic acid into lard. This enzyme was further studied for the effects of enzyme load, organic solvent, substrate ratio, reaction time and temperature respectively. HPLC the products from the acidolysis reactions were analyzed. The results showed that the optimal reaction conditions for the highest incorporation of caprylic acid were as follows: hexane was the reaction medium; enzyme load was 15 %(Wt % of substrates); mole ratio of substrates was 1: 2 (lard: caprylic acid); reaction time and temperature were 24h and 55~60℃ respectively.

The extract ratios of the low polar oleoresin from Amomum villosum Lour. are compared between two methods: One is by microwave-solvent extraction(A); and another is by the solvent extraction(B) only. We chose the low polar solvent ether to extract the low polar components in the dry fruit powder; and also chose the suitable factors such as the ratio between the solvent and the powder, temperature and time in microwave-solvent method. The result showed that the extract ratio raised 14. 3% in the method A than in the method B, and the best ratio in the method A corresponds to the following condition: the ratio between the solvent and the powder is 5:1; the temperature is 45℃; and the time is 180 seconds. The extracting ratio is 3.2%. Applying the Solid Phase Microextraction (SPME) Headspace Sampling. we analyses the extract by CG/MS. The result showed that the extract content is raised and the selectivity is obvious in the microwave extraction.

Based on the single factor experiment, research was made of the application of different water activity lowering agents in the production of dried prawns by adopting the L9(34) orthogonal experiment. The results showed: In the single factor experiment, all water activity lowering agents could decrease the Aw of the dried prawns in different degrees. The capability of them: Compound phosphate>citric acid>Glycerol>1,2-Propanediol>Ethanol. In the L9(34) orthogonal experiment, capability of mixed water activity lowering agents was stronger than single one’s, the optimum compounding was composed by follows: 1.0% Glycerol, 0.5% 1,2-Propanediol, 1.0% ethanol, 0.2% compound phosphate. The Aw value was 0.759. In the preserve experiment, the shelf-life could reach 90d when the Aw value of dried prawns was under 0.833. Furthermore, it had no substantial influence on the color, texture, tissue and flavor of dried prawns on condition that low dosage water activity lowering agent was added.

Sodium caseinate contained peptidic angiotensin I-converting enzyme (ACE) inhibitors, which were released during hydrolysis by trypsin. The molecular mass distributions of the hydrolysates were identified by high performance size exclusion chromatography (HPSEC). Green chemical product - safflower oil sucrose have been are obtained by two-step approach. By means of orthogonal experiment, the optimum conditions of synthesis of sucrose fatty acid esters were obtained: sucrose: safflower oil fatty acid esters =1:0.8 (mol:mol), fatty acid soap 15% (wt), catalyst 2%, reaction temperature 135℃, reaction time 2h and reaction pressure≤5mmHg. Through analysis of TLC, the results showed that product was made of sucrose monoesters and sucrose diesters. SE structure was confirmed by IR spectroscopy with yields 60%.

This articles studied extracting and absorbing the red pigment of Dianthus caryophyllus with different resins. The four kinds of resins were compared. The results showed that AB-8 resin had the best performance of absorbing the red pigment of Dianthus caryophyllus. In the course of desorbing the absorbed pigment 50% ethanol was optimal, AB-8 resin was selected during the experiment. After repeating 20 times, the absorption factor was only at a loss of 1.95%. The pigment could dissolve in polar solvent. Under the acidic condition, the pigment was fresh red and had a better resistance to light and hot.

Two separation methods of cholesterol were compared in food contained egg: one was conventional Soxhlet method; the other was supercritical carbon dioxide extraction(338 bar,40℃) along with solid phase separation( a solid phase collector was joined with ODS static phase). Egg noodles, biscuits and sweetmeat were equably mixed, and then was added in the internal standard and anhydrous Na2SO4. One part of evey sample was separated by SFE-SPE method, and the remainder was done against benzinum purificatum by conventional method. After Soxhlet separation, the further purification was made by SPE. Dissocia- tive cholesterol can be determined in the Soxhlet-SPE and SFE-SPE separation (with capillary gas chromatography). The same result was gained by two separation methods. However, the continuous SFE-SPE was a substitute for Soxhlet method, for with many important assets such as short analysis time and a few solvent needed.

The single and compound enzymatic hydrolysis conditions of tilapia (Oreochromis niloticus) skin collagen were studied. Based on the assay of inhibitory activity of single enzymatic hydrolysates to ACE, Bromelain and Alcalase 2.4L were selected to be compound enzyme. The optimal hydrolytic conditions of skin collagen with the two enzymes were determined by orthogonal test. The results show that the optimal hydrolytic conditions of Bromelain and Alcalase 2.4L are temperature 45℃, pH4.5, E/S 4000U/g, time 4h and concentration of substrate 6% and temperature 55℃, pH7.5, E/S 6000U/g,time 2h and concentration of substrate 4%, respectively. Thereafter, hydrolytic experiments of compound enzyme were done. The results indicate that it is better to hydrolysis by Bromelain at first, then by Alcalase 2.4L.The hydrolytic degree of the prepared hydrolysates is 30.43%, the ACE inhibitory ratio is as high as 68.6% in vitro. The high activity ACE inhibitory fractions were separated and purified using the Sephadex G-25 and the Reverse-Phase High Performance Liquid Chromatography (RP-HPLC). The concentrations of the hydrolysates to inhibit 50% of ACE activity (IC50) were measured. The results showed that the IC50 of the original hydrolysate and the Sephadex G-25 filtrate were 2.82mg/ml and 0.65mg/ml, respectively.

This paper extracted the protein and pectin from Premna Micropheua leaves by means of compound extraction.At first, the result indicated the content of base-soluble protein >water-soluble protein > alcohol-soluble protein >salt-soluble protein through the protein -extracting using different solution and establishment optimum condition and parameters of pectin- extracting form clear liquor and residue after protein-extracting.At the same time , by use of the single factor experiment of extraction liquid, pH, time, salt concentration in the salting-out of pectin, adding the orthogonal test of extraction temperature, pH, time the rate of solid to solution ,the author gained the optimum condition of compound extracting protein and pectin form Premna Microphylla: the ideal compound extractant is salt liquor. The optimum condition of extracting pectin: the extraction temperature 90℃, time 70minture the pH of liquor 2.5, the rate of solid to solution 1:45. In this condition, the ration of pectin gained 22%, at the same time it can gain 0.155% protein.

Some defects such as dark gray color and hard-dissolving clots are often found in the instant paste of Kudzu powder currently sold in local area. With respect to it, a new enzyme method of preparing instant edible Kudzu powder was studied in this paper. The results showed that Pullulanase hydrolysis shortened branching of amylopectin in Kudzu powder compared with that in raw material, while the degree of hydrolyzation was improved. SEM suggested an increase in the amount of starch slice and its obvious loosing surface after enzyme hydrolysis. The Kudzu powder became more apt to dissolving, thus its instant solubility was considerably improved. The optimum processing conditions resulted from the orthogonal experiment showed that: the dose of enzyme 4.8PUN/g,the temperature is 50℃,and the reaction time 2h.

In this paper, the isolation and purification conditions for CGMP from pepsin casein hydrolysate were studied by ammonium sulfate precipitation, dialysis desalting and Q Sepharose fast flow chromatography. The results show that 0.71% recovery rate CGMP with high purity could be obtained immediately from salting-out supernate by 60% saturation degree ammonium sulfate precipitation;and non-CGMP proteins could be separated with 20% saturation degree ammonium sulfate effectively;Desalting fraction of crude separating mixture could be chromatographed by Q Sepharose FF equilibrated and added samples with pH 8.5, 20mM Tris buffer and eluted with 20mM Tris buffer, pH 7.1containing 0.3M NaCl; and the maximal bearing capacity was 34.2mg protein for 1ml resin. With that optimizing purification conditions, the estimated yield of CGMP fraction was approximately 2.19% of casein; its sialic acid recovery rate to entire content in hydrolysate supernatant was 87.4% and glycosylation ratio of purified CGMP could be raised to over 0.472. The entire processing condition was simple, fast ,low cost and suitable for industry.

The microwave etherifying technology was applied to produce phosphate monoester starch(SMEP). The etherifying condition to the substitution(DS) was studied by orthogonal experiment and variance analysis. The results indicated that the successive order of different effect factors on degree of DS of starch phosphate monoester was reaction time > the level of microwave power>pH>quantity of the etherifying agent. The optimum etherification condition was: reaction time 10min., microwave power 900W, pH=6,quantity of the etherifying agent 30%. The variance analysis results was showed that the reaction time had significant influence on DS and microwave power had appreciable influence on DS .The property of the phosphate monoester starch had been studied .The results showed that the phosphate monoester starch property in the paste transparency, apparent viscosity , heat stability, freeze-thaw stability, were remarkable increased and the retrogradation was remarkable weakened. The modified starch property had not advantage in resistance to shearing stress and tolerance to electrolyte (NaCl). Compare with the traditional method,the technology of phosphate monoester starch using microwave is more mildly in reaction conditions and more efficient.The DS and starch paste property with microwave heating under 900W,10min is similar to that with traditional heating under 140℃,120min.

Processed mulberry juice has the longest absorbing wavelength in 720nm. The results of the study of clarification of mulberry juice by means of chitosan showed that transmittance was over 80% and the amount of soluble solid content and Vc was remained almost unchangeable when the amount of chitosan was at 0.4~0.7g/L,the temperature at 35~55℃ and the pH at 2.5~4.5, After the orthogonal trial, the optimum technological conditions for mulberry juice clarification by using chitosan were 0.6g/L, 45℃and pH4.5.

It is practically significant for studying on analysis methods for rapidly and easily determining trace metals in food. In this paper the stripping voltammetric responses were obtained in the solutions containing varying concentrations of Cu , Pb , Cd , and Zn by Square Wave Stripping Voltammetry in supporting electrolytes of KNO3 & HNO3(pH1.5). A feed-forward neural network was utilized to cope with the analysis results and trained to model the relationship between responses and concentrations in the situation of simultaneous determination of the four heavy metals. The results of the sample show that neural network can be used to solve the problems of significant complications due to interaction of metal cations. Based on comparatively accurate testing results, this method has practical applications and research values.

Volatile components of four typical samples taken from the long-ripenned Douchiba (DCB) and the mold-fermented Douchi (DC) produced using traditional methods in Guizhou were extracted with a headspace solid-phase microextraction (HS- SPME) apparatus and analyzed by gas chromatography-mass spectrometry (GC-MS). A combined total of 102 volatile compounds were identified from four samples (DCB-1, -2, -3 and LGM-DC), which contained 65, 48, 50 and 47 components, respectively. 12 classes of compounds identified included alcohols (16), acids (13), esters (18), aldehydes (5), ketones (11), phenols (2), pyrazines (11), furans (9), pyrones (2), sulfur-containing compounds (4), amide-containing compounds (9) and miscellaneous compounds (2). 41 compounds reported with great contributions to aromas of condiments derived from soybeans were found in more than three samples. Pyrazine-type compounds, as one of the characteristic products formed by Maillard reaction (MR), next to acids in contents, doubtless play a important role in formations of principal aromas of products.

The leaf or stem extract from the fragrant plant, Vitex negundo L.var. heterophylla (Franch.)Rehd. occuring in Beijing area, was prepared by supercritical CO2 fluid extraction (SFE) and then analyzed by gas chromatography-mass spectrometry. Through comparison with mass spectra database and their retention indices relative to n-alkanes, total of thirty-five volatile components from the leaf and the stem were identified. They were all of monoterpene or sesquiterpene constituents, with β- caryophyllene the most major, followed by β-methylionone and β-farnesene.

Study effects on the volatile component of procyanidins from Sorghum Episperm added to rice distilled liquor in were this paper. The volatile compositions in distilled liquor with different levels of SPC (0%, 0.05%, 0.1%, 0.3%) were analyzed with GC-MS, and 16 kinds of volatile compositions were identified. The results showed that 0.05%, 0.1% and 0.3% SPC levels had the effect of increasing the content of ethyl acetate, constraining the superfluous production of acetic acid and furfural, and controling the content of fusel oil in the distilled liquor. And adding 0.1% SPC was most appropriate.

The essential oil of the peel and flesh of Garcinia mangostana L. was obtained by simultaneous distillation and solvent extraction. The chemical compositions were separated and identified by GC/MS and relative contents were determined by area normalization. The results were that: the yield of the essential oil from the peel is 0.14%, and 22 chemical constituents separated and identified in the peel was found to be 92.68%. The yield of the essential oil in the flesh is 0.21%, and 11 chemical constituents separated and identified in the flesh was found to be 69.11%. Vinyl, Paphthalene and Acid appeared to the major chemical constituents in the oil of the peel; and Alcohol, Vinyl and so on appeared to the flesh. The predominant ones of which in the peel and the flesh was .alpha.-Cubebene (relative content: 32.41% and 41.38%).

The concentration of heavy metals including plumbum (Pb),chromium (Cr), hydrargyrum (Hg) and arsenic (As) were determined on Artemisia seleirgensis Turoz collected from 10 terminal markets and 6 super markets by atomic absorption spectrophotometer and atomic fluorescent spectrophotometer method. The results showed that the concentration of Pb and Cr were 0.35±0.10mg/kg and 0.22±0.10mg/kg, respectively. However, Hg and As were not detected except two samples at 0. 01mg/kg. Compared with limits of National Food Health Standards of Pb<0.20mg/kg, Cr<0.50mg/kg, Hg<0.01 mg/kg and As<0.50mg/kg, the concentration of Pb of 97.3% samples were unqualified. The pollution of the environment may be responsible for high level of Pb in Artemisia seleirgensis Turoz.

The fatty acids in the oil were esterified and then analyzed by gas chromatography-mass spectrometry (GC/MS). 12 fatty acids were identified in the chicory. Seven types of macroporous resin were used to compare their performances in absorbing and desorbing thephenylethanoid glycosides from Cistanche tubulosa (Schenk) R.Wight. Resin AB-8 was the better one for the phenylethanoidglycosides with an adsorption capacity of 57.12mg/g and an desorption ratio of 90.32%. AB-8 absorbent capacity was also studied.Experiment results showed that AB-8 possessed the highest absorption capacity under the condition of pH 3.43, concentrationof sample 3.6~6.0mg/ml and flowing rate of 1.5BV/h.Using 40% ethanol as eluent, desorption ratio of the phenylethanoidglycosides reached 94.15% and elution peak was approximatively symmetric.

Methods: Chromatographyconditions: C18 column with methanol-0.5% glacial acetic acid solution(15:85) as the mobile phase, flow rate 1.0 ml/min, detectionwave length at 271nm and 27℃. Results: Content of gallic acid in fruit of Trapa manshurica is 0.08%, the average recovery is98.3% and RSD is 1.89%. Conclusion: The method is simple, sensitive, and accurate. This paper reported a method for determining aloin in aloe products by RP-HPLC. After being extracted with methanolby ultrasonic, aloin was separated on a Kromasil C18 column with acetonitrile-water(25:75 by volume) as a mobile phase at a flowrate of 1.0ml/min and detected at 359nm. The average recovery was 97.8% and the relative standard deviations(n=5) was 0.75~3.8%. This method was proved to be simple,rapid,accurate and reliable.

The antioxidant activities and total phenolic contents of five different types of honey (loquat honey ,vitex honey,milkvetch root honey. clan honey and medlar honey)were evaluated respectively. The total phenolic content of honeys wasdetermined by Folin-Ciocalteu method and the antioxidants of honeys were assayed through some methods such as DPPHradicals ,super- oxidea nionr adicals,h ydrogen radicals,l ipid per-oxidationa nd reducing power. The purpose of the study is to explore the effects of Health Tea of Balsam pear on the blood sugar and lipid in experimental animal. Diabetic mice model was induced by intravenous injection with 45mg/kg alloxan. Hyperlipidemia rats model was induced by the method of confusing lipid metabolism. The Results showed that: 1 Diabetic mice model and Hyperlipidemia rats model were made successful. 2. The blood sugar in the diabetic mice was obviously reduced at the dosage of 1.33mg/kgbw of Health Tea of Balsam pear. And The blood sugar of the normal mice was not affected. 3 Health Tea of Balsam pear(po 1.67、 2.01g/kgbw) prevented the increase of cholesterol in serum of Hyperlipidemia rats. It also significantly increased HDL-C level in serum of Hyperlipidemia rats. So the conclusion is that Health Tea can improve the blood sugar in diabetic mice and the lipid in serum of Hyperlipidemia rats.

Objective: To study the effect of phycocyanin on myocardial contraction action of isolated toad heart and the mechanism involved in this action. Methods: Isolated toad heart model produced by Straub’method was used to observe the change of myocardial contraction force and cardiac rate after phycocyanin were used. Results: At three concentration (1.2, 4.5, 8.4μg /ml)the myocardial contraction force increased extremely strikingly (p<0.01),But didn’t show the effect on toad cardiac rate. Propranolol and verapamil antagonized the effectof phycocyanin (8.4μg /ml). Conclusions: The main effects of phycocyanin were that it haspositive inotropic action, the mechanism of the action might be related to the excitation of β-receptor and calcium channel.

Objective: To study the effect of anti-cerebral ischemia of GSC. Methods: A focal cerebral ischemia model was set up through blocking one-side medium cerebral artery, the effects on infarction area and behavior scoring(neuological deficits) of GSC were observed; blood stasis model was built in rats , the effects on platelet aggregation rate and clotting time of GSC were observed. Results: GSC with dose of 10.4, 20.8 and 31.2mg/kg could significantly decrase the infarction area and improve behavior score(p<0.05, p<0.01); GSC with dose of 10.4, 20.8 and 31.2mg/kg could remarkably decrase the platelets aggregation rate(p<0.05) , and markedly prolong the clotting time in blood stasis rats. Conclusion: GSC have the effect of anti- cerebral ischemia and its mechanism may be related to lowering platelets aggregation rate and prolonging clotting time.

Objective: Discuss about the anti-tumor effect and mechanism of MVET, which provides the basis of clinical application. Method: Divide mice (injected by tumor cell) into 5 groups randomly, each group has 10 mice, in which both male and female take one half. Administer MVET 10 days continuously. 24h after administration, kill and weigh them. Separate and weigh tumors in right axillary fossa in mice. Result: MVET inhibit growth of sarcoma S180, liver carcinoma HEP and gastric carcinoma MFC cell bearing tumor mice obviously, it can suppress the growth of S180 significantly and prolong the survival time even at a lower dose. Meanwhile, it can increase the phagocyte index A, expuragation index K, thymus coefficient and increase the transform function of the lymphocyte in vitro. The method combined orthogonal test L 8 (2 7 ) has been applied to research the effecting factors of experiment time, water temperature of swimming experiment, feeding temperature and their mutual action in loaded swimming of china medicine function liquidⅠ, the orders of effecting factors of loading swimming applied by extreme difference (R low) was: Water temperature of swimming experiment > experiment time > (water temperature of swimming experiment × experiment time)> feeding temperature > (experiment time × feeding temperature). The best combination in the experiment of loaded swimming of china medicine function liquidⅠwas: the test lasted for 30d, the water temperature of swimming experiment was 25℃ and the feeding temperature was 25℃. Therefore, the accuracy of loaded swimming experiment should be increased, or it would result in contingency of anti-fatigue appraisal results and unavoidably cause the phenomenon of bad reappearance.

To study the antioxidant effect in vivo of FSPV and PSPV on mice, contents of malondiadehyde(MDA) and lipofuscin (LPF), enzyme activities of superoxide dismutase(SOD) and glutathione peroxidase(GSHpx) and the total antioxidant competency (TAOC) in the serum, heart, liver and kidney of mice were measured by reagent box. The followings are results. FSPV can significantly or remarkably significantly decrease the contents of MDA and LPF and increase TAOC in tested tissues, but having no obvious influence on the activity of SOD and GSHpx. PSPV can increase significantly or remarkably significantly the TAOC and activity of SOD and GSHpx and decrease the contents of MDA and LPF in tested tissues. Although the mechanism is different, both FSPV and PSPV can increase the antioxidant action in vivo significantly and prevent lipid peroxidation damages int ested tissues.

The results showed that the fragment walnut kernel’s peroxide value and acid value are increasing in the time of accelerated oxidation. The package of nitrogen (N 2 ) or vacuum has no marked difference with the contrast in preventing the quantity of tannin or vitamin E decreasing, but they can delay walnut kernel’s peroxide value and acid value increasing by increasing the superoxide dismutase (SOD) activity and keeping high catalase (CAT) activity.

In this paper bacteriostatic chart of Chufa functional compound—BQ was studied by using filter paper technique. Its preserving effect was studied by mensurating bacterial count in water chestnut cake. The results showed BQ had obvious bacteriostatic effect and the effect on bacteria is superior to mildew and yeast. In water chestnut cake, BQ preserving effect can be clearly watch out when its addition level is more than 0.1%. 0.5% BQ has the same preserving ability with 0.1% potassium sorbate that can prolong shelf life to 7days. It also can moderate the problem relating to the quality of water chestnut cake such as corrupt spot, aerogenesis and bleeding water. And Its has good dose-effect relationship between Adding level and quality.

In this paper, Nisin, metacetonic acid calcium, potassium sorbate and, sodium lactate was used to Chicken Sausage. The effect of the multiple type and the single type preservative on chicken sausage were studed by measuring the amount of the microbe in different store time and sense organs analysis. The results showed that Nisin based blend preservative can significantly inhibit microbiological contamination.
