In this paper, the effects of three carbon sources, namely, xylose and xylo- oligosaccharides, on the enzymatic selective hydrolysis of plant hemicelluloses,by the anaerobic culture of bifidobacterium adolescentis in vitro, and the abilit to promote the proliferation of bifidobacteria were examined. It was shown that the home- made xylo- oligosaccharides were cap able to support the growth of bifidobacterium adolescentis. It was found that the bifidobacterium adolescentis could metabolize xylobiose and xylotriose preferentially, and secrete extracellular enzymes, which were able to degrade the xylotetraose and xylopentose into the lower molecular weight xylo- oligosaccharides to be digested easily by bifidobacterium adolescentis.

The parameters during the dissolving of chitosan, such as the kind of solvent, the size of chitosan and the reaction temperature and time, affecting the viscosity and acidity of the chitosan solution was investigated. It could be found that both the dissolving of chitosan and the degradation of the dissolved chitosan occurred. The effect of temperature and time on the degradation of chitosan during storage was also researched. The degradation regularity of chitosan was discussed when the chitosan was dissolved and stored. The experiments provided the base of preparation of chitosan solution for many fields such as immobilized enzyme and ofhers.

The rheological properties of tomato purees determined at four temperatures,30,40,50 and 60℃ ,and four different concentrations,15,18,20and 24° Brix showed that the systems exhibited pseudoplastic behavior with large magnitudes of Casson yield stresses(40- 140Pa).Two models,K=K0exp(Ea/RT) and K=Aexp(BC),could be used to describe the effect of temperature and concentration on the consistency coefficient of tomato purees respectively.by regression analysis. The results have also showed that those two models were fitted to the experimental data well within the experimental conditions used in this study. Some equations that described the effects of temperature and concentration on the viscosities of tomato purees at the same time were derived. And these equations could be utilized to predict the viscosities of tomato purees processed at different temperatures and different concentrations.

Nitrate would turm into nitrite by enzyme and microbial action Within human body.Under certain conditions nitrite would react with protein and turn into nitrosamine, which was provedtobe the most suong carcinogen by the animal tests .while the state standard assay method of findins the nitrate content in vegetables has been only the cadmium calumniation method, but its operation would takea long time, and its test process was complex,so it could not meet the vegetable fast circulation requirement.Hence the Nitrate Radical Ion Selectivity Electrode Method would not only simplify the operation process but also shorten the fest time,so it could be an ideal method.

This article discussed the reaction systems employed in ester production catalyzed by lipase. The enzymatic reaction system was a consequence of certain structure patterns of lipases.Water could directly affect the hydration of the enzyme or indirectly change the natrue of the reaction media and/or enzyme support materials. The media and enzyme support material often interacted with other factors affecting the reaction.Several methods of water removal and their effectiveness in lipase- catalyzed reaction were discussed. There was a recent surge of interest in modifying lipase systems with surfactants.
