The mechanical and barrier properties of Pulluan films were studied. X - ray and Scanning Electron Microscopy (SEM) were also used to observe the surface and the crystallinity structures of pulluan films. Pullu an film were shown to have low oxygen permeability and high moisture permeability. The microstructure and the crystallinity structure of Pulluan films revealed that the Pulluan films formed from the solution containing 5% Pulluan and 5% giycerin exhibited high oxygen barrier property and tensile strenth.

In this paper, the effects of pasteurization on the muscle of Java tilapia are reported. The results show: by the pasteurization(Vp = 195min) the peroxidase is inactivated. the cell of bacteria on the muscle is killed, but the rate of dehydration may go to fifteen pecent.

Synthesis of butyl p - hydroxybenzoate with phospho - tungstic acid catalyst and azeotropism of n butyl alcohol is studied and the optimum reaction conditions are determined. The method shows the advantages of shorter reaction time, higher yield of product and unnecessary post - treatment.

The extraction of volatile oil from Chinese date was carried out by steam distillation and the treat ment of distillate with ethyl ether to obtain oil fraction. The collected distillate was identified by GS - MS. The result showed that there were 71 compounds separated from the distillate; among the 39 identified compounds were 7 esters, 17 orgnic acids, 6 alkanes, 2 aldehydes, 4 alcohols, 2 olefinic matters and 1 phenol. The peneanoic acid methyl ester was the most significant content among the esters.
