Fed mice with the product of monasucs fermenting. It shows that the monascus mycelium and ferment fluid inhibit mice’s copulence and also improre their swimming and oxygen lacking endurance contrasted with contrasting class, their decrease of blood sugar after swimming experiment was less than the contrasting class. It means that the products of monascus mycelium and ferment fluid are healthy food of high value.

It is important for continuos fermentation to select a suitable camers of immobilized cells. We embedded Khuyveromyces sp. Y-85 cells with inulinase in various carriers such as chitosan, polyvinyl alcoholsodium alginate, agar, sodium alginate, gelatin, and utilized them for high fructose syrup production. After multiply compared with each other in the mechanical strengths of the prepared gels, the optimal reaction conditions and stabilities of immobilized cells, the retentions of inulinase activity and manufacturing procedures, the gelatin is selected as better carriers for immobilized yeast cells.
