微生物来源谷氨酰胺转氨酶的发酵生产及应用研究进展

摘要: 谷氨酰胺转氨酶(Transglutaminase,TG酶)是一类应用广泛,具有优秀蛋白交联能力的酶。TG酶普遍存在于动植物和微生物中,微生物来源的TG酶(mTG酶)拥有良好的的酶学性质,因此广泛应用于工业化生产和应用中。为了探究mTG酶工业生产和应用的潜力,本文阐述了mTG酶的理化性质和自身的活化机理,以及利用野生菌株和不同的重组基因工程菌株发酵生产mTG酶的研究成果及进展;同时综述了mTG酶在多种工业生产中的应用及潜力。以期为mTG在工业生产和应用方面的研究提供参考和新的思路。

Abstract: Transglutaminase (TGase) is a widely used enzyme with excellent protein cross-linking ability. TGase is commonly found in plants, animals and microorganisms, and the microbial TGase (mTGase) is widely used in industrial production and applications because good enzymatic properties. To investigate the industrial potential of mTGase, this paper describes the physicochemical properties and activation mechanism of mTGase, as well as the research results and progress of mTGase production by wild and different recombinant genetically engineered strains. Meanwhile, the application and potential of mTGase in various industrial production were reviewed. It is expected to provide reference and new ideas for the research of mTGase in industrial production and application.
