辐照冷却包装分割猪肉研究

摘要: (60)Cor射线对不同菌株的沙门氏菌致死作用不同。猪霍乱沙门氏菌较肠炎沙门氏菌容易被杀灭。肠炎沙门氏菌CCTCC AB94018在0~5℃辐照条件下,100g猪肉含3.2×104个活菌经1.5kGy辐照就可被杀死,其D(10)值为0.49kGy。辐照冷却包装分割猪肉在0~5℃可被保存30d以上。1.99kGy辐照的冷却包装猪肉照后第二天生肉和炒熟后均无异味;3.3kGy,辐照的冷藏23d后无异味;6.6kGy照后47d后无异味。

Abstract: The effect of 60Co Y irradiation oil the ethal dose of the strains of salmonellaspp.was observed.TheSalmonella cholerasuis could be more easily’ killed than Salmonella enteritidis.At 0~ 5. 1 .5kGy could kill 3 .2 X 1 04S.enteritidis CCTCC AB94018 found ill 100 grams pork with the D,., value of 0.49kGy.lrradiated chilled packaged17orb chops could be preserved for more than 30 days at 0~5 .In the caw’’ or cooked meat of the above pork chopsirradiated by 1 .99kGy.off odors cold not be detected.By 3 .3kGy irradiation and preserved for 23 days.or by 6.6kGyand preserved for 47 days.the pork chops cold not be found off-odors
