超声辅助常温冲泡绿茶的条件筛选和品质分析

Condition Screening and Quality Analysis of Ultrasound-assisted Brewing Green Tea at Room Temperature

摘要: 为缩短绿茶常温冲泡的时间并获得较优品质,试验利用超声作用辅助常温冲泡,通过感官审评和主要滋味组分及香气组分的分析,筛选出优化冲泡条件,并比较其与标准沸水冲泡的品质差异。结果表明,超声辅助常温冲泡绿茶的优化条件为投茶量5g、常温水150mL(即茶水比1:30)、超声10min,该条件下冲泡的绿茶与标准沸水冲泡相比,水浸出物、茶多酚和咖啡碱含量较低,氨基酸含量较高;二者绝大部分香气组分相同,但常温冲泡的缺少了辛醛、反-2-辛烯醛等具有不愉快脂肪气味的物质,增加了α-芳樟醇、己酸-反-2-己烯酯等嫩香清香的物质。试验初步确定了超声辅助常温冲泡绿茶的现实可行性,所得茶汤滋味鲜醇爽口,香气清鲜高长,整体品质优于标准沸水冲泡。超声法特别适用于工业化萃取茶汤,可大大节省能源,降低废气排放。

Abstract: To shorten the time of brewing green tea at room temperature and get good quality, the study makes use of ultrasound-assisted brewing at room temperature. Screening optimized brewing conditions, and comparing it with the quality of standard boiling water brewing through sensory evaluation and chemical analysis of major taste components and aroma compounds. The results showed that the optimization brewing conditions of ultrasound-assisted brewing green tea at room temperature is 5 g tea, room temperature water 150 mL (the ratio of the tea and water is 1: 30), ultrasound brew 10 min. In this condition, the content of water extracts, polyphenols and caffeine are lower and the content of amino acids is higher compared with standard boiling water brewing tea. Both aroma components are substantially the same. However, tea brewing at room temperature lacks substances that having unpleasant fat odor, like octanal, (E)-2-Octenal, increase fragrance substances like alpha.-linalool, trans-2-hexenyl caproate. The study initially identifies practical feasibility of ultrasonic-assisted brewing green tea at room temperature, which tastes fresh and mellow, the aroma is fresh and last long, the overall quality is better than the standard boiling water brewing. Ultrasonic method is particularly suitable for industrial extraction of tea, it can greatly save energy and reduce emissions.
