不同饲养条件对苏尼特羊营养品质的影响

Influence of Different Feeding Conditions on Sunite Sheep Nutritional Quality

摘要: 以不同饲养方式下的12月龄苏尼特羊为实验材料,取股二头肌、背最长肌、臂三头肌三个部位,测定其0h和24h的pH值,并分别测定其灰分、蛋白质、脂肪、硫胺素、还原糖及矿物质含量并进行比较分析。结果表明:屠宰后45min的pH,舍饲的苏尼特羊肉中的pH值显著高于放牧(P<0.05),24h后,舍饲的pH值与放牧相比没有显著差异,舍饲的苏尼特羊肉中的脂肪含量高于放牧,而放牧的苏尼特羊肉中的蛋白质、灰分、硫胺素、还原糖含量高于舍饲,并且矿物质在苏尼特羊体内吸收有一定的相关性,放牧的苏尼特羊比舍饲更有利于苏尼特羊体内蛋白质、矿物质、还原糖等营养成分的积累,从而使其羊肉的营养成分更丰富,品质更佳,具有较高的营养价值。

Abstract: The objective of this study was to investigate the difference in the nutritional component of longissimus dorsi ,biceps femoris and triceps brachii muscles between different feeding methods of sheep (grazing, house-feeding) . Sunite sheep were slaughtered at 12 months of age and longissimus dorsi ,biceps femoris and triceps brachii muscles were chosen. The results showed that pH value of the house-feeding group measured at 45 min postmortem were significantly higher than the grazing group(p < 0.05),after slaughter 24h,the house-feeding group have not significant difference with the grazing group,intramuscular fat content of the house-feeding group was higher than the grazing group,however,?crude protein,ash,thiamine and reducing sugar content of the grazing group were higher than the house-feeding group, absorption of mineral element contents in sunite sheep under different feeding methods had?some?correlation.?Accumulation of nutritional component on grazing Sunite sheep was better than the house-feeding,the grazing Sunite sheep are ?rich in?a?variety?of?nutrients with?high nutritional?value.
