Study on Distribution Law and Combined Form of Selenium in Selenium-enriched Wheat Grain

Abstract: In order to explore the distribution law and combined form selenium in selenium-enriched wheat grain, atomic absorption spectrophotometry was used to detect selenium in major components of wheat. The results indicated that the most seleniums exist in the organic matter, accounting for 83.34% of total selenium and they are combined with polysaccharide and protein, and selenium 43.08% in protein of total selenium . The selenium of glutenin accounts for 22.60% of most total selenium
