~1H NMR Fingerprinting Spectra and Pattern Recognition of Beer

Abstract: In this study,an analytical method of the fingerprint identification based on 1H NMR spectroscopy was proposed with beer as object. The procedure including sample pretreatment,NMR technique,experimental condition,data treatment and principle component analysis was investigated for beer specially. In this work,with the access to the 1H NMR spectra of 19 brands of beer,their fingerprinting characteristics were preliminary distinguished. While using such means as principle component analysis of the data for the sub-category,the selected samples were successfully grouped basing on producing areas. The results showed that the created method is reliable,feasible and easy to be handled,and it can be used in the proof-test of liquid food products.
