Relationship Between Hazard Analysis and Critical Control Point and Foodborne Diseases

Abstract: The application of the Hazard Analysis and Critical Control Point (HACCP) system is rapidly progressing, in particular in large and medium scale food industries recently. However, concomitant with the headway of the HACCP system in food safety management, the incidence of foodborne diseases is increasing rapidly worldwide. Does the increase in foodborne diseases represent a failure of the HACCP system? The paper expound the relationship between both through the factors infuencing the incidence of foodborne diseases, Potential of HACCP to prevent foodborne illnesses. The result show that the paradox come from misunderstanding the content of HACCP, function in preventing disease and effect factors.
