Abstract: Transglutaminase catalyzes an acyl-transfer reaction in which the γ -carboxamide groups of peptide-bound glutaminyl residues are the acyl donors.The enzyme catalyzed cross-linking in casein,myosin and β-lactoglobulin.The article summarized the advancement of microbial transglutaminase application in food processing.
