Abstract: Superoxide dismutase(SOD) in eggs can inhibit the photoreduction of nitro-blue tetrazolium (NBT).Thisreaction can be used to quantitatively determine the enzyme activities of SOD.That the activities of SOD can beinhibited by H2O2 indicates that the formation of SOD in eggs is CuZn-SOD .Polyacrylamide gel electrophoretogramof purified SOD solutions dialyzates and chromatographic seperated SOD solutuions of egg white & yolk show somedifferent colorless transparent lines of isoenzymes on the blue gel background the spectrum indicate that the wavelengths of max aborption of SODin egg white are 620nm at visible light area,and 280nm at UV area,and those in eggyolk are 610 and 280 respectively.
