Selection of carrier for Immobilized Cells with inulinase

Abstract: It is important for continuos fermentation to select a suitable camers of immobilized cells. We embedded Khuyveromyces sp. Y-85 cells with inulinase in various carriers such as chitosan, polyvinyl alcoholsodium alginate, agar, sodium alginate, gelatin, and utilized them for high fructose syrup production. After multiply compared with each other in the mechanical strengths of the prepared gels, the optimal reaction conditions and stabilities of immobilized cells, the retentions of inulinase activity and manufacturing procedures, the gelatin is selected as better carriers for immobilized yeast cells.
