The Effects of Three Kinds of Ginger E xtracts on the Oxidation of LowDensity Lipid -protein(LDL)

Abstract: The aqueous solution of transitional metal ion(Cu 2+ )andinitiator of free radical(AAPH)was used to ox-idizelowdensitylipid -protein(LDL),andtheanti -oxidativeactivities ofthreekindsofgingerextractswereevaluated inthetwooxidation -systems.There sults showedthattheseextracts had protectiveoxidanteffects,especiallythe75%ethanol extract,as well as signific ant synergistic effect when mixed to gether.
