Abstract: The structures of major anthocyanins purified from black sunflower seed shell were analyzed by HPLC and HPLC-tandem quadrupole mass spectrometry (HPLC-MS/MS). Two major monomers were observed in purified anthocyanins. Both monomers were further separated by paper chromatography (PC). They were identified as cyanidin-3-O-monoglucoside and peonidin-3-O-monoglucoside, respectively according to the results of infrared spectroscopy (IR), ultraviolet spectroscopy (UV) and Francis studies and HPLC-MS/MS analysis.
