Progresses on the nutritional component analysis and authenticity identification of camel milk

Abstract: Camel milk is one of the important specialty dairy products in the northwest region, containing rich protein, unsaturated fatty acids, amino acids, vitamins, minerals and other nutrients, with good antioxidant, anti-inflammatory, antibacterial and immune regulation activities. The nutrient content of camel milk is influenced by various factors, and there are obvious differences in its content under different conditions. This review summarizes the use of advanced omics technologies, including proteomics, metabolomics and lipidomics, to reveal and identify the characteristic nutrients in camel milk, discusses the effects of breed, origin, season, feeding conditions, lactation stage and processing technology on the nutrient content of camel milk, and further summarizes the progress of real-time identification of authenticity of camel milk based on characteristic components, providing theoretical guidance for the development of characteristic components of camel milk, high-value utilization and the healthy development of the camel milk industry.
