Abstract: The fruits of Rosa roxburghii Tratt, Rosa sterilis S.D.Shi, and Rosa canina L. represent major medicinal and edible plant resources in the Rosa genus. These species have garnered considerable attention due to their abundant nutritional and bioactive constituents. This review summarizes the bioactive components identified in these three fruits, including polysaccharides, organic acids, flavonoids, phenolic acids, phenylpropanoids, terpenoids and amino acids, as well as their biological activities, such as antioxidant, anti-inflammatory, anticancer, hypoglycemic, lipid-lowering, anti-hyperlipidemic, anti-apoptotic, radioprotective, anti-obesity, anti-pulmonary fibrotic, and acute lung injury-preventive effects. Furthermore, this paper describes recent advances in the development of functional food products based on these fruits, offering a theoretical foundation for the development of functional products.
