Kinetic Modeling of the Effect of Storage Temperature on the Growth of Mold in Corn

摘要: 以储藏玉米中霉菌为研究对象,用修正的Gompertz方程拟合腐败霉菌分别在不同储藏温度、不同时间条件 下的生长动力学模型,采用修正的线性Arrhenius-Davey方程建立二级模型,模拟温度对玉米中霉菌生长的比生长速 率和迟滞期的影响。对构建模型的有效性分别进行了验证,模型的R2较高,分别为0.959和0.994,偏离因子分别为 0.951和0.927,精确因子都小于1.082,均方差值(0.009~0.027)也较小。表明所构建的线性Arrhenius-Davey模型 能较好地描述、预测不同温度对玉米中霉菌的比生长速率和迟滞期的影响。

Abstract: The modified Gompertz equation was applied to fit a kinetic model for mold growth in corn stored at different temperatures. Further, a second-order model using the modified linear Arrhenius-Davey equation was established to describe the influence of temperature on the specific growth rate and lag phase of molds in corn. The model was validated by additional experimental data. The results showed that the model had a high coefficient of determination (R2), of 0.959 and 0.994 for specific growth rate and lag phase, respectively. The obtained bias factors of the model were 0.951 and 0.927, respectively, and its accuracy factors were less than 1.082. Furthermore, its mean square errors (MSEs) (0.009–0.027) were low. The current study proved that the Arrhenius-Davey model can better describe and predict the influence of storage temperature on the growth rate and lag phase of molds in corn.
