摘要: 果蔬的保鲜和加工对果蔬业的发展越来越重要,已逐步成为我国农产品新的经济增长点之一。然而目前我们在这方面的研究和发展与国际相比还存在较大差距。本文综述了国内外果蔬的保鲜加工业现状果蔬的主要保鲜加工技术,高新技术在果蔬保鲜加工中的应用以及果蔬产业未来的发展趋势,希望为加快我国果蔬业的发展,缩短同国际间的差距提供新的思路和解决方法。

Abstract: The fresh maintaining and processing technology is of great importance in the development of fruit and vegetable industry, as well as agricultural products manufacture. This paper summarized the present situation and future development of the fresh maintaining and processing technology in fruit and vegetable industry; the main techlniques and their application in this field. It also provided a new approach to accelerate the development of our fruit and vegetable industry.
