摘要:  本文分析了微波杀菌技术的作用机理,对该技术在食品工业的应用进行了综述,并对食品微波杀菌中微波装置的选用、工艺确定、包装对杀菌的影响以及温度分布等问题进行了讨论。

Abstract: In this paper, the mechanism and application situation of microwave disinfect in food processing were introduced. The selection of microwave installation, determine of technology, effect on package and temperature distribution were forecasted.
