凤头姜不同黄酮的抗氧化作用研究

摘要: 比较凤头姜水溶和醇溶黄酮对自由基的清除能力,同时与维生素C和BHT相比较。结果发现:凤头姜黄酮抗氧化能力大小为O2·-,总抗氧化能力,ABTS·+,和DPPH·。在DPPH·体系中,水溶黄酮的抗氧化效果强于醇溶黄酮和BHT,但弱于Vc,水溶和醇溶黄酮的IC50分别为585.7482μg/mL和1013.4542μg/mL;对ABTS·+、O2·-和总抗氧化能力测定中,醇溶黄酮的抗氧化效果均强于水溶黄酮、Vc和BHT,醇溶和水溶黄酮对的ABTS·+的IC50分别为21.8987μg/mL和87.5432μg/mL;在超氧阴离子自由基体系中,水溶和醇溶黄酮的IC50分别为26.5591μg/mL和22.2862μg/mL;在FRAP体系中,水溶黄酮和醇溶黄酮的TEAC1000分别为45.7782μg/mL和36.4214μg/mL。

Abstract: The antioxidant activity of alcohol-soluble and water-soluble flavonoids from Fengtou ginger were determined, and compared with the Vc and BHT. The results showed that, The antioxidant capacity sequence of fengtou ginger’s flavonids was O2·-,FRAP,ABTS·+,and DPPH·. In the DPPH system, the antioxidant effect of water-soluble flavonoids were better than BHT and alcohol-soluble flavonoids, but weaker than Vc, and the IC50 of water-soluble and alcohol-soluble flavonoids was 585.7482 μg/ml and 1013.4542 μg/ml, respectively. In the ABTS·+、O2·-and FRAP system, the antioxidant effect of alcohol-soluble flavonoids was better than Vc, BHT and water-soluble flavonoids, for the ABTS·+, the IC50 of water-soluble and alcohol-soluble flavonoids were 87.5432 μg/ml and 21.8987 μg/ml, respectively. The IC50 on O2·- of water-soluble and alcohol-soluble flavonoids were 26.5591μg/ml and 22.2862μg/ml, respectively. In FRAP systems, the TEAC1000 of water-soluble and alcohol- soluble flavonoids were 45.7782μg/ml and 36.4214μg/ml, respectively.
