GC-MS Analysis of Muscle Fatty Acid Composition of Oula Sheep Living in Qinghai Province

Abstract: The fatty acid composition of longissimus dorsi in Oula sheep living in Qinghai province was analyzed by GC-MS after methyl esterification and compared with that of Tibetan sheep and Small Tail Han sheep. A total of 17 fatty acids were identified in the muscle of Oula sheep, mainly consisting of stearic acid (22.33%), palmitate acid (25 91%), oleic acid (39.32%) and linoenic acid (1.87%). Saturated, monounsaturated and polyunsaturated fatty acids accounted for 51.62%, 42.41% and 5.34% of the total fatty acids, respectively. Oula sheep showed no remarkable differences in unsaturated fatty acid content when compared with Tibetan sheep, but was higher than mall-tail Han sheep.
