Applications of Thermal Imaging in Food Quality and Safety Control

Abstract: As a convenient, fast, non-destructive testing technique, thermal imaging shows a good prospect in food safety control. Following the introduction of basic principles, imaging systems and influencing factors, this paper reviews its applications in the assessment of food quality, processing parameters and food contaminants, in order to provide a theoretical reference for the further expansion of thermal imaging applications in food industry.
