Progress in Understanding the Effect and Mechanism of Metal Ions on Biofilm Formation of Lactic Acid Bacteria

Abstract: Lactic acid bacteria have been widely used in various fermented foods, and their existence in human physiological flora plays a key role in human health. Therefore, the application of lactic acid bacteria has become a current research hotspot. The biofilm forming ability of lactic acid bacteria has attracted growing attention of researchers because the biofilm can effectively improve the environmental tolerance of lactic acid bacteria. Studies have shown that metal ions have a significant effect on the formation of biofilms among the various factors. This review paper discusses the influence and mechanism of metal ions on the biofilm formation of lactic acid bacteria, with the aim to provide a theoretical basis and future direction for clarifying the relationship between metal ions and the biofilm formation mechanism of lactic acid bacteria.
