摘要: 对罗非鱼片在不同干燥条件下的工艺进行了研究。结果表明,干燥温度、风速以及鱼片的厚度都是影响热泵干燥罗非鱼片的重要因素。在干燥温度35℃,风速1.6m/s,厚度0.4~0.5cm的工艺条件下,产品的干燥速度较快,在复水时间50min时复水率最高。

Abstract: Tilapia Fillet on different drying air conditions were investigated by heat pump drying (HPD). Results showed that drying temperature, wind speed and thickness are important factors. Under the conditions of 35 ℃,wind speed 1.6 m/s and thickness 0.4~0.5 cm, the drying rate is faster and the reconstitution rate is the highest after 50 minutes.
