清香型信阳毛尖茶关键呈香成分鉴定

Identification of the Key Odorants in Clean Aroma-Type Xinyang Maojian Green Tea

摘要: 采用气相色谱-嗅闻-质谱结合香气活性值(odor activity value,OAV)分析清香型信阳毛尖的关键呈香成分。香气提取物稀释分析结果表明,溶剂辅助风味蒸发和顶空固相微萃取共计从信阳毛尖茶汤中得到48 个呈香物质。风味稀释(flavor dilution,FD)因子≥27的呈香物质有22 个,其中二氢猕猴桃内酯的FD因子最高(6 561),其次是香草醛(2 187)、香豆素(729)、2-苯乙醇(729)、己醛(243)、4-羟基-2,5-二甲基-3(2H)呋喃酮(243)和δ-癸内酯(243)。定量分析结合OAV结果表明,OAV>1的关键香气成分有17 个,包括(E,Z)-2,6-壬二烯醛、二甲硫、3-甲基丁醛、香叶醇、反-β-紫罗酮、芳樟醇、6-甲基-5-庚烯-2-酮、(E,E)-2,4-庚二烯醛、己醛、2-甲基丁醛、茉莉酮、壬醛、δ-癸内酯、γ-己内酯、香豆素、δ-茉莉内酯和吲哚,表明这些成分对清香型信阳毛尖茶香气品质的形成有重要贡献。

Abstract: In this study, gas chromatography-olfactometry-mass spectrometry (GC-O-MS) combined with odor activity value (OAV) was used to analyze the key odorants of clean aroma-type Xinyang Maojian (XYMJ) green tea. The results of aroma extract dilution analysis (AEDA) showed that 48 volatile compounds were obtained from XYMJ green tea infusion by solvent-assisted flavor evaporation (SAFE) and headspace-solid phase microextraction (HS-SPME). Twenty-two volatile compounds with flavor dilution (FD) factor ≥ 27 were identified. Among these, dihydroactinidiolide showed the highest FD factor (6 561), followed by vanillin (2 187), coumarin (729), 2-phenylethanol (729), hexanal (243), 4-hydroxy-2,5-dimethylfuran-3(2H)-one (243) and δ-decalactone (243). Through quantitative analysis, we identified 17 key odorants with OAV > 1, including (E,Z)-2,6-nonadienal, dimethyl sulfide, 3-methylbutanal, geraniol, (E)-β-ionone, linalool, 6-methyl-5-hepten-2-one, (E,E)-2,4-heptadienal, hexanal, 2-methylbutanal, jasmone, nonanal, δ-decalactone, γ-hexalactone, coumarin, δ-jasmolactone and indole. The OAV values indicate that these key odorants make important contributions to the aroma quality of clean aroma-type XYMJ green tea.
