摘要: 在食品加工与保鲜领域,分子氢(H2)从基理到应用具有全链条提质增效的优秀潜质。本文从H2理化特异性介入,针对其“物理递送-化学清除-生物调控”的多层级协同作用机制,分类评述其在有害自由基直淬、氧化链式阻断、氧化还原调控、内源氧化防御、腐败代谢抑制五大功能;并重点针对其超强定压比热容和导热率等特性,综述了H2在食品辅助冷冻贮藏、还原气氛包装、发酵调控、干燥及与非热加工协同等食品冷场加工和保鲜应用场景中的差异化应用成效,展示了其多样生命活性跨度的食品体系的广谱适用性。进一步,就其在食品领域安全使用的有效浓度、过程规范及标准体系衔接等关键瓶颈进行深度剖析和评述,以提供理性视角和切实可行的解决策略。本文旨在为H2辅助食品加工和保鲜技术应用绿色规模化,提供坚实的理论依据与前瞻性技术展望。

Abstract: In the field of food processing and preservation, molecular hydrogen (H2) has excellent potential to enhance quality and efficiency throughout the entire chain, from basic principles to applications. This article reviews, based on the physicochemical specificity of H?, its multi-level synergistic mechanisms of 'physical delivery–chemical scavenging– biological regulation,' categorizing its five major functions: direct quenching of harmful free radicals, inhibition of oxidative chain reactions, redox regulation, endogenous oxidative defense, and suppression of spoilage metabolism. Moreover, ?this article highlights the exceptional specific heat capacity and thermal conductivity of H?, and summarizes its differentiated effects in various food applications, including assisted cold storage, reducing atmosphere packaging, fermentation regulation, drying, and synergy with non-thermal processing. These findings demonstrate the broad applicability of H? across diverse food systems with varying bioactivities. Furthermore, the article provides an in-depth analysis and review of key bottlenecks for its safe use in the food sector, including effective concentrations, process specifications, and alignment with standard systems, offering a rational perspective and practical solutions. The aim is to provide a solid theoretical basis and forward-looking technological outlook for the green , scalable application of H?-assisted food processing and preservation technologies.
