Recent Advances in Antioxidant Peptides Derived from Milk Proteins

Abstract:

Milk-derived antioxidative peptides are composed of 2 to 20 amino acids. The antioxidant activity of peptides has important relationship with the characteristic amino acid sequences. The production, isolation and properties of antioxidant peptides from milk were reviewed, different antioxidation assay methods were compared, the applications of antioxidatnt peptides in food were introduced and the future directions of milk-derived antioxidant peptides were put forward in this paper.
