Abstract:

In recent years, a large number of studies have demonstrated that trans-fatty acids are harmful to human health, and the impact of trans-fatty acids on cardiovascular tissues have been fully evaluated. However, some negative data need to be explained. As an effective analytical technique, proteomics has been widely applied in the investigations of human diseases. Due to its successful application in the field of nutrients, we have undertaken the combinatorial studies of trans-fatty acids and proteomics, which will be benefited to explore a new breakthrough. In this paper, the source of trans-fatty acids, hazards and corresponding proteomics are reviewed.

Key words: trans-fatty acids, cardiovascular disease, proteomics
