Research Progress of Temperature Monitoring and Shelf-Life Decision System in Pork Cold Chain Management

Abstract: Pork is the most important meat product consumed in China. However, the quality and safety of commercial pork is not optimistic. It is extremely important to improve pork safety assurance system by monitoring the relationship amongst temperature fluctuation, quality loss and risk probability in cold chain logistics. In this paper, it is emphasized particularly on the principles and application of novel management technologies such as temperature monitoring system, shelf life prediction, shelf life decision system and integrated assurance system for monitoring food quality and safety in cold chain, which could be a reference for further development of information-based management for monitoring pork quality and safety in cold supply chain.
