Abstract:
A novel method was developed to prepare high purity capsaicin monomer using reverse phase C18 column chromatography. Capsaicinoids were extracted from capsicum oleoresin and then fractionated by column chromatographies on silica gel, alumina and reverse phase C18 silica gel. As a result, a mixture was obtained consisting of capsaicin with a purity of 98% as determined by HPLC and dihydrocapsaicin. This study suggests that reverse phase C18 column chromatography is an effective method to purify capsaicinoids and prepare high-purity capsaicin monomer.
