Chitosan Preparation and Preservation Effect on Eggs

Abstract: This paper studied the technological conditions of the priparation of Chitin and Chitosan.As a kind of coating materials,Chitosan could be coated on the egg shell to keep fresh.The effects of Chitosan on the shelf fife of egg were also discussed.
