Production Process of Fermentative Beverage of Se-Rich Flammulina Velutipes

Abstract: The disposition of fermentative stock of Se-sich Flammulina velutipes,formula of fermentative beverge and selection of sterilization ways and so on have been studied.Experimenttal results showed that the optimum disposition way was as follows:cold treatment of stock 24h (0~3℃),centrifugation 20min (5000r/min) and adding gelatin 1%;The optimum formula of fermentative beverge was as follows :50%stock,10%sucrose and 0.1%citric acid.The autoclaving sterilization was found better than intermittent sterilization.
