Determination of Nutritious Components and Antioxidant Activities of Wheat Seedling Juice

Abstract: The nutritious components and antioxidant activities of wheat seedling juice were determined in the study. The results showed that the wheat seedling juice contains various amino acids, abundant vitamins, mineral elements and flavones, and has strong antioxidant activities. The antioxidant activities measured by linoleic aid method is 4.9 times and 7.2 times stronger compared to butylated hydroxytoluene and α-tocopherol, respectively. The SOD activity measured by xanthine oxidase method is 7 times stronger compared to grap; and also has satisfactory GSH-Px activity and radical scavenging activity.
