Enzymatic Assay of β-Glucans in Polysaccharides of Boletus edulis

Abstract:  An enzymatic method for analysis of technology in polysaccharides of Boletus edulis Bull has been studied in this paper .The experimental results showed that the optimal amount of three enzymes used were: α-amylase 2000U/g,trypsin 1500U/ g and saccharogenic enzyme 4000U/g. The yield of the sample obtained was 5.1% content of β-glucans.
