Abstract: Taking acer truncatum bunge leaves as the raw material, the best enzyme was screened from different enzymes for the Chlorogenic acid. The single factor tests, orthogonal test designs and variance analyses were applied to optimize manipulation parameters of enzymes extracting technology. The results showed that cellulase possessed the strongest effect to Chlorogenic acid among different enzymes, the optimum manipulation parameters were cellulase dosage 0.03%,pH value 4.5,material/solvent ratio 1:55,extracting time 2.0h at 50℃.
