Abstract: Polysaccharide of pumpkin’s stems and leaves was extracted with water and ethanol, and study the condition of decoloring process. With the single-factor and orthogonal test, the optimal condition included as following:temperature 60℃, time 60min, quantity of joined hydrogen peroxide double of raw material and pH10. Polysaccharide of different part or period were determined with anthraquinone-sulfuric acid colorimetric method. The result showed that the polysaccharide of pumpkin’s leafstalk in July was most, and the content is 21.00%. Secondly polysaccharide of Pumpkin’s stem is 15.70%. The polysac-charide of pumpkin’s leaf was least, and the content was 8.30%. So June and July are the optimal period for picking Pumpkin’s cirrus without regard to other factors. The results can provide a theoretical basis for a reasonable harvest of pumpkin’s stem andl eaves.
