Isolation and Indentification of Lactic Acid Bacteria Strains with Higher Yield of Exopolysaccharide

Abstract: Sixteen strains of lactic acid bacteria have been isolated and purified from the mixed starter, and the OD value and colonies measured after 12 hours liquid culture at 40℃. The pH, viscosity coefficient and content of exopolysaccharide of yogurt made from these lactic acid bacteria strains were assayed. Two strains of lactic acid bacteria of the highest yield of exopolysaccharide are screened. They are identified by API bacterial identification system as Lactococcus lactis subsp. Lactis and Pediococcus.
