Abstract: Objective:The fresh glutinous Rehmannia pigment extract and its stability were studied.Method:Fresh Rehmannia glutinosa’s fresh block root was taken as raw material and extracted by organic solvent using ultrasound. The optimum extracting conditions were got with orthogonal test.Result:The optimum conditions are temperature 40℃,treating for 10 min with ultrasound and ratio of material to ethanol absolute 1:3(W/V).Under these conditions, the extraction rate is 6.6%.Results showed that the pigment is stable on alkalesccnce condition, and pH value, heating, oxidants and some metal irons have tremendous effects on it, but ultraviolet radiation and antioxidants have little effects on it.Conclusion:The optimum extraction conditions Rehmannia glutinosa pigment are established by single factor test and orthogonal test. The stability of the pigment is confirmed.
