Optimizing Conditions for Enzymolysis of Crude Peptide from Rape Pollen by Response Surface Methodology

Abstract: Based on single-factor tests analysis (substrate concentration, enzyme concentration and substrate concen- tration ratio, pH, enzymolysis time and enzymolysis temperature), the optimum conditions of alcalase enzymatic hy- drolysis are determined by response surface methodology as follows: pH9, hydrolyzing temperature 50 ℃, enzyme concentration 1460 U/g pro substrate concertration 6%, hydrolyzing time 2 h.
