Abstract: Soluble soybean polysaccharide(SPSS)is one of the effective ingredients in soybeans, and it has various functions, such as antioxidant activity, stabling protein particles in acidic solutions, etc. The research mainly emphasizes on the extraction of soybean polysaccharide(ESP),and then analyzes its monosaccharide components. The ESP primarily focuses on the quantities of SSPS under different temperatures, time,pH,as well as conditions of varied firm than liquid, thus finds out the optimum arrangements of the four factors, namely temperature 100 ℃,time 3 h,pH5,and firm than 2 liquid. After the elementary purification, the extraction is identified with TLC(Thin Layer Chromatography)and FTIR(Fourier Transform Infrared Spectroscopy)for its monosaccharide constiutions.
