Development of Models to Predict Growth of Brochothrix thermosphacta

Abstract: Brochothrix thermosphacta is the major spoilage microorganism in chilling pork.Based on one of the isolated strain S-8 from chilling pork,its status of growth from 0~10 ℃ was studied.By the SAS program and the status of growth at different temperatures,compared to linear model,Gompertz model predicted well the growth of Brochothrix thermosphacta,and gained its parameter in Gompertz model;The secondary model of Brochothrix thermosphacta gained by square-root model was described by the following equation:U(1/2)=0.1192(T+6.00),T∈[0,10];Based on the data from experiments,the average bias factor and accuracy factor were 0.982 and 1.223 respectively,and this result showed that the secondary model could be a useful tool for predicting growth of Brochothrix thermosphacta from the temperature history of chilling pork.
