Optimization of Liquid Fermentation Conditions of Monascus sp. ZZ for Producing Ergosterol

Abstract: Single-factor test results indicated that the optimal conditions for ergosterol production by Monascus sp. ZZ are 10% inoculation size, natural pH, 220 r/min and 30 ℃.
