Isolation of Lactic Acid Bacteria with Broad-Spectrum Antimicrobial Activity and Analysis of Antimicrobial Substances

Abstract: A strain with strong inhibitory activity against Gram-positive bacteria, Gram-negative bacteria and mold, named as LPEM818, was isolated from Millet by the overlay plate method. The strain was identified as Lactobacillus pentosus by physiological and biochemical characterization and 16S rRNA sequence homology analysis. In the cell-free fermentation supernatant, some antimircrobial substances including lactic acid, acetic acid, succinic acid, citric acid, palmitic acid, oleic acid, stearic acid and linoleic acid were found by GC-MS and HPLC analyses.
