A Review of Applications of Electrical Properties of Fruits and Vegetables in Processing and Quality Detection

Abstract

Abstract: This paper reviews the recent progress in research and applications in disease and insect control, dielectric heating, drying and quality evaluation of electrical properties of fruits and vegetables. Besides, current problems in research and applications and future prospects are discussed.
