Study on Distribution and Combined Forms of Selenium in Selenium-enriched Radish Leaves

Abstract: Different proteins were extract from selenium-enriched radish leaves by pH 8.5 or 6.0 KH2PO4-Na2HPO4 buffer,distilled water,diluted salt solution,ethanol and diluted alkali in turn,and polysaccharides were extracted with hot water. The selenium contents in proteins,polysaccharides and dried radish leaves were determined by atomic absorption spectrophotometric method respectively. The results indicated that in radish leaves,the main components containing selenium are protein and polysaccharide,accounting for total selenium 54.48 % and 17.31 % respectively. In the proteins containing selenium,watersoluble protein has the highest selenium content,accounting for total selenium 26.78 %.
