Abstract: Soluble protein contents, soluble sugar content, ethylene release, relative weight loss and maturity of mango fruit were determined during storage in controlled atmosphere systems with different concentrations of CO2 in this study. The results showed that the different contents of soluble protein and soluble sugar and the higher concentration of CO2 can delay fruit maturation, reduce fruit ethylene production quantity, and postpone ethylene peak appearance. But there is no statistical difference in the relative weight loss.
