Abstract: Objective: The extraction process of protamine from Oncorhynchus Keta spermary and its antimicrobial activities were studied. The extraction conditions of extracting protamine were optimized by the orthogonal design: H2SO4 concentration 7.5%, volume H2SO4 3.5 times that of speractary volume of 95% alcohol solution 3 times that of spermary and extraction time 2 hours. The nutritive values of the protamine were analysed. The results showed that the protein content of protamine is 89.7%, and the content of arginine is even higher. The results of active test suggested that the protamine shows fairly high antimicrobial activity against gram-negative bacteria, gram-positive bacteria and Saccharomyces cerevisiae as well. It is an effectiven aturala ntiseptic.
