Abstract: Water-insoluble dietary fiber(WIDF) has higher binding capacity for mecury, cadium,lead and copper than water-soluble dietary fiber(WSDF) from wheat bran, with the capacity 35.0-37.8μmol/g vs 19. 8-23. 1μmol/g under pH2 and 184. 5-214.5μmol/g vs 138. 3- 164. 6μmol/g under pH7. The bound heavy metals can be released by the microrganisms in colon and more heavy metals will be released from WSDF because it is more completely fermented than WIDF.The cation exchange capacities are 0.41 and 0.46meg/g for WIDF and WSDF respectively,and it bids hesvy metals through chemical and physical adsorption.
